A delicious indulgent porridge, which is the perfect healthy, cereal alternative to get your chocolatey fix without the refined sugar and dairy.
If your kids love chocolatey cereals like Coca Pops, then they will love this healthy breakfast recipe. They won't even realise it's healthy, but it won’t raise their blood sugar levels, so you avoid the bouncing off the walls before 10am problem. It’s so delicious you can easily hide goodness like flaxseed and chia seed within the recipe. Flaxseed contains essential omega 3 fatty acids and fibre and chia seeds are high in fibre but also contain protein, so are great if you are eating fewer animal products. They also contain calcium, manganese and magnesium, a true superfood. This is also great if you're looking for vegan breakfast ideas, as you can make it up with any milk you like.
I love to make this in big batches and save it in portions in the freezer.
You will need
- a handful of porridge oats
- a mug full of milk or plant based alternative
- a teaspoon of cacao powder (more if you want it really chocolatey!)
- a teaspoon of ground flaxseed (optional)
- a teaspoon of chia seeds (optional)
- raw honey/maple syrup/stevia to taste
- a sprinkle of hazelnuts, chopped
Heat the milk in a large saucepan until it starts to boil, then turn down the heat so that it’s simmering and add the oats while stirring all the time. Cook for 10 minutes, making sure you are watching and stirring regularly. Add the cacao powder, flaxseed and chia seed.
Simmer for another 10 minutes. Check for doneness, you want the oats to be creamy but still have ‘bite’.
Once it’s ready, spoon into a bowl, add some honey, maple syrup or stevia for sweetness, sprinkle with the chopped nuts, and you’re ready to tuck in! This is soo good!
